Our Story

At New York's Butcher Brothers LLC., our story is deeply rooted in tradition, community, and a passion for quality. Founded by Joshua Boyles, a Cooperstown native with over 21 years of experience in the art of butchering, we bring you a commitment to excellence and a love for the craft.
Born and raised in the heart of Otsego County, Joshua developed an early appreciation for the land, its bounty, and the value of hard work. His journey into butchering began with a desire to provide his community with the finest meats while honoring time-honored practices. Over the past two decades, Joshua has honed his skills, blending traditional techniques with modern standards to deliver products that are not only delicious but locally sourced and expertly prepared.
A devoted husband and father of five, Joshua’s family values are at the core of everything he does. He understands the importance of sharing meals that bring people together and strives to offer cuts and creations that are worthy of your family’s table. His passion for butchering stems from a deep respect for the animals, the process, and the joy of nourishing others.

Owner & Butcher: Joshua Boyles

No matter the cut, Joshua will masterfully prepare it. As a skilled artisan meat cutter with over a decade of experience, he has honed his craft through roles in custom slaughterhouses and retail grocery stores. At Trinity Meat Company, Joshua would oversee all plant operations, including humane animal handling, slaughtering, breaking down carcasses into retail cuts, and ensuring compliance with USDA sanitation regulations. His passion for the culinary art of whole-cow butchery sets him apart, as he approaches each cut as a unique expression of his creativity

Owner: Robert Coulman

Rob and Josh have shared a close friendship spanning over 20 years. Rob grew up just across the street from the Butcher Brothers shop, on his family-owned property. His family relocated from Brentwood, NY, to the area when Rob was just three years old. He went on to graduate from Cooperstown Central School in 1985 and remained in the neighborhood for several more years before eventually moving to Florida in the fall of 2008.
Although Rob didn’t have a background in the butcher industry, he recognized Josh’s talent and potential as both a skilled butcher and a savvy businessman. When Josh faced a career setback, Rob stepped in to collaborate with him, and together brought the dream of Butcher Brothers to life.
